I had planned to try (for my first Skinny Taste recipe) your Skinny Chicken Parmesan from your first book, but for some reason, I was looking up healthy chicken nuggets on Google and came across this recipe. Here's a tip that saved me a lot of time and might help some fellow cooks–I used a bamboo strainer/skimmer tool to bread them–it made it really easy to move them from the olive oil mixture to the breading mixture without getting my fingers wet and crumby. Below I’ve included some basics to simply cook the nuggets up, with an additional extra two or three steps for extra crisp nuggets.
